make pumpkin barsI was thinking of a fun fall cooking activity that our clients could try as summer fades and everything pumpkin set in!  We have clients in every stage of the aging process, companion, minor supervision, constant supervision and total care. It is important to keep our clients engaged in activities no matter the cognitive level. As the saying goes, if you don’t use it, you lose it! This includes physical activity and mental activities.

The reason I love this recipe, is not only is it super healthy, BUT THE RECIPE ALSO REQUIRES NO OVEN! Not only is this great because we are still having 90 degree days, but it is also beneficial for our clients who shouldn’t get into the kitchen around hot appliances or sharp objects or maybe they get super distracted with everything in the kitchen. The recipe can be made in the dining area or if you have someone who is bed bound, you can take this activity and recipe to them!

It is super quick and easy!

WHAT YOU WILL NEED:

15 oz pumpkin puree

1 cup of coconut flour

¼ cup coconut pam sugar

Cinnamon to taste

DIRECTIONS:

1. Mix flour and sugar together in a medium to large bowl

2. Add in pumpkin puree and mix all together

3. Pour mix into an 8X8 glass baking dish and sprinkle with cinnamon and or powdered sugar

Refrigerate for 30 minutes, cut and enjoy!
